Abstract

The effect of honey and starch was evaluated to determine its synergistic antibacterial activity against Salmonella typhi and Vibrio cholerae using minimum bactericidal concentration (MBC). In S. typhi, the MBC for pure Palawan honey without starch was 25% (v/v). With starch added, MBC dropped to 23% (v/v). In V. cholerae, the MBC using the same brand of honey was 8% (v/v); MBC was at 1% (v/v) with starch added. The dropped in MBC with S. typhi was significant at p>0.0009; in V. cholerae, at p>0.0017. The results suggest that the introduction of starch can promote effectively the antibacterial activity of honey against V. cholerae and secondarily with S. typhi.
