Abstract

The study aimed to detect staphylococcal enterotoxin (SE) in selected street foods outside DLSU-D using sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) and to isolate the Staphylococcus aureus cells by culture method using Mannitol Salt Agar (MSA). There were five trials and three replications performed for each sample such as fish ball, kikiam, kwek-kwek and proven which were freshly cooked and in reheated conditions. The presence of SE was not detected in all of the samples. On the other hand, the growth of S. aureus cells was observed in both fish ball and kikiam which were freshly cooked and in reheated conditions. The results showed that the presence of S. aureus cells in freshly cooked and reheated street foods was not significantly different with each other (p > 0).
