Abstract

This study evaluated the street food sauces microbial quality and susceptibility status of Escherichia coli, Salmonella spp., and Staphylococcus aureus isolates to antibiotics. Collected street food sauces from different street food stalls outside DLSU- D Gate 1 and Kadiwa market underwent serial dilution used in pour plate method for total bacterial count and coliform count. The results showed that all sauces exceeded the acceptable level for assessing microbial quality of foods making it potentially infectious. S. aureus were present in all street food sauces from stalls in both sampling sites and only few E. coli were present in some street food sauces from stalls in Kadiwa market. Isolates of these specific bacteria were subjected to Kirby- Bauer method of antimicrobial sensitivity testing. Most S. aureus and E. coli isolates showed susceptibility to specific antibiotics introduced for each. However, there was one E. coli and one S. aureus isolate that showed resistance to Ampicillin (75 mcg) and Pencillin G (10 units) respectively.
