Abstract

This study involved the physico-chemical analysis of depurated mussels in changed and unchanged tap water and saltwater. Samples of live mussels were collected in Calatagan, Batangas. Mussels were treated with the different depuration processes and were subjected to chemical analysis particularly moisture and fat determination. The color, texture and percentage acceptability as perceived by 10 individuals were also observed. The results of the study showed that the mussels depurated to change tap water every two hours were light orange in color, smooth and were highly acceptable for human consumption.
